Asian Style Salad

This salad is colorful, crisp, healthy and flavorful.




Ingredients:
Kohlrabi - 2 each
Carrot – 1-2 each
Cucumber - 3 each
Bell pepper - 2 each
Scallion - 4 each

Asian style dressing:
Garlic - 2-3 cloves
Hot pepper - 1 each
Salt - 1 teaspoon
Soy sauce - 5 tablespoons
Sesame oil - 2 tablespoons
Peanut oil - 4 tablespoons (Substitute with any vegetable oil)
Vinegar (preferably rice vinegar) 5%-9% - 2 tablespoons
Sugar - 1 tablespoon
Peanuts - 50 grams (1 2/3 oz)

Preparation:
1 Wash and peel 2 kohlrabi, 1- 2 carrots (depending on their size), 2 bell peppers, 3 cucumbers and 3-4 scallions.




2 Thinly slice the scallions.






3 To cut the vegetables, square them off, cut them lengthwise, making parallel cuts of the same thickness. Stack the cut slices and cut them into even strips, for a julienne. (1/8 x 1/8 x 1-2 inch, 3 mm x 3 mm x 3-5 cm) 



4 To make the dressing: Mince 2-3 cloves of garlic, and mince one hot pepper. Add one teaspoon of salt, one tablespoon of sugar, two tablespoons of 5 % rice vinegar (or another vinegar) and five tablespoons of soy sauce. 



5 Whisk in the mixture of 2 tablespoons of sesame oil and with 4 tablespoons of peanut oil, or substitute with any vegetable oil to your preference. Toss the salad gently, to coat evenly. 

6 Toast and roughly chop 50 grams (1 2/3 oz) of peanuts, remove their skins easily and roughly chop them. 





7 Arrange the salad on a plate, garnish with the toasted peanuts and sliced scallions.
